LEMON RICOTTA CAKE & CRANBERRY SAUCE



lemon ricotta cake 
ingrediënten :
120 gram soft butter
200 gram honey
1/2 vanilla bean
1/4 cup lemon zest
240 gram almond meal
300 gram ricotta  (recipe)
4 eggs
sliced almonds
spring form 20 cm

directions :
1. Preheat the oven to 160 degrees Celsius. Grease and line the spring form.
2. Separate eggs. 
3. Mix butter, honey, vanilla marrow and zest until soft. Add the yolks. 
4. Add almond meal, mix lightly, and fold in ricotta cheese. 
5. Beat egg whites. Add 1/3 to the mixture, add the rest, and make sure not to overmix. 
6. Pour the mixture into the form and sprinkle the sliced almonds on top.
7. Bake for 40 to 45 minutes, let it cool off. Serve plain or with a cranberry sauce!

cranberry sauce
ingrediënten :
250 gram cranberries
75 ml port  
75 ml orange juice
2 cinnamon sticks
orange zest

Heat the cranberries with the sticks and zest in the port and orange juice until soft and thickened.
